To waste or not...

I think it all depends on the situation.
If you're served it at a dinner table by someone who doesn't know your diet, like a friend's mum or something, I would probably just eat it. Usually in this situation somebody there would know I'm vegan though and would say "oh Mum she's vegan" or something, and I'd just say, yeah I usually avoid certain foods but it's okay, I'm happy to eat this.
Sometimes they'll insist on arranging something else vegan for me, other times not.
You don't want to look like a martyr at the table especially when other people are about to eat the food.
Wasting food is pretty pointless. Leftover food scraps are a huge, huge contributor to greenhouse gas emission.

Not only a huge contributer, but a kid in a 3rd world country would love to have those scraps, because they only get a small bowl of rice or something shared between their whole family.

True. Plus I believe it's more the buying of the food, not the actual consumption. Though I'd never eat meat, etc.
But I think if someone has gone out and paid for the food, and cooked and prepared it, then its already done, isn't it? Theres not much you can do.
Though I'd definitly mention it to them for next time so they wouldn't keep serving me this or that.

Although if it was something like cultural/belief where they have to eat meat or something?? Would you (try) eat it then, to be polite?

I think that if it's something you believe in, no matter what, you should stick to it.  You don't suddenly think rape, murder, slavery, etc is okay because another culture does.  Once you start blurring the lines of what you believe then where do you stop?

Although I could just be blowing it a little out of proportion...  It's all what you are comfortable with of course happy.  I ended up just eating biscuits at a christmas party because that's all that was vegan, next time I'm taking my own stuff haha.
