I absolutely love baking vegan goodies and these days, the only way I can eat a muffin/cupcake/cake is if I bake it myself. Unfortunate, but rewarding.
Anybody who enjoys vegan baking should post their favourite recipe in this topic, whether it be a cupcake, muffin, cookie, fudge, slice, loaf, cheesecake (PLEASE!! I want a good veg recipe for cheesecake!)
2 tubs Tofutti cream cheese, softened
1 cup sugar
Juice of 1 lemon
Dash of vanilla
1 box biscuit base (or pack of biscuits, crumbled with some butter to stick together)
1 box frozen berries
Preheat the oven to 180°C.
Prepare base as per instructions on box.
Combine the cream cheese, sugar, lemon juice, and vanilla until smooth.
Add the berries and pour into the base.
Bake for 60 minutes, or until the top is golden.
Chill overnight.
Oh and I made these the other night and they went down very well!
Banana and Coconut Muffins
Ingredients:
1 1/4 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup margaine
2/3 cup sugar
2 bananas, mashed
1 tsp vanilla
egg replacer for 1 egg
1 cup coconut flakes
Preparation:
Pre-heat oven to 190 degrees.
In a large bowl, combine the flour, baking powder and salt.
In a separate bowl, cream together the margarine and sugar, then add the bananas, vanilla, egg replacer and about 3/4 of the coconut flakes.
Add the flour mixture to the bananas and stir to combine.
Drop by spoonfuls into lined or greased muffin tins, and sprinkle the remaining coconut on top.
Baked for 20-25 minutes, until lightly golden brown.
I added some Sweet Williams choc chips into half the mix and took out the coconut for Choc Banana muffins - worked a treat!! ^__^
seeing as cheesecake has already been mentioned.. does anyone have a real hit in terms of a no bake cheesecake.. i've already made 2 different recipes in the past couple of months and they weren't to my liking.. one had coconut in it and that put me off coconut for a while.. it really tasted nothing like a cheesecake should

I'm baking some chocolate butterfly cakes at the moment!
1 cup soymilk
1 teaspoons apple cider vinegar (or white vinegar)
3/4 cup sugar
1/3 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder (I'm using the equivalent of melted cooking chocolate)
1 teaspoon baking powder
1/4 teaspoon salt
Strawberry jam
Soyatoo whipped cream
Directions
1 Preheat the oven to 180 c
2 grease muffin pan
3 Whisk together soy milk and vinegar in a large bowl, and set aside to curdle. Add sugar, oil, and vanilla to the soy mixture and beat until frothy.
4 In a separate bowl, mix together dry ingredients.
5 combine wet and dry ingredients.
6 Pour the batter into prepared baking cups, filling them to three quarters full.
7 Bake for 18 to 20 minutes, until a toothpick inserted into the center of one of the cupcakes comes out clean.
8 Transfer cupcakes to cooling rack and allow to cool completely.
9 scoop out centre of muffins in one clean cut, and divide into two pieces
10 place some strawberry jam into the centre of the muffin
11 fill slightly overflowing with soyatoo cream
12 place halved pieces on top of the cream
13 ENJOY
i love baking i have a few favorites ones like peanut butter cookies that require flour peanut butter and egg replacer oh plus sugar ill find the recipe when i have more spare time
i used to bake alot more but now i bake once in awhile need to get back into it now bub is that bit older
(I didn't add the lemon, and used tthe Leda ginger nut cookies instead of plan ones. so so so good).

that looks insanely amazing and delicious! thanks heaps.. i can't believe it's a no bake.. i have gotta make this one.. i really seem to crave cheesecake or ice-cream over other sweets..
