that looks insanely amazing and delicious! thanks heaps.. i can't believe it's a no bake..  i have gotta make this one.. i really seem to crave cheesecake or ice-cream over other sweets..
awesome!

just make sure you give it time to set. the first time i tried to make it, i didn't leave it to set and yeh.... was more of a soy-cream-mash than a cheesecake. :|

Second what Matt said. The cheesecake on the vegan easy website is so GOOD! and easy! Except for the whole, finding Soyatoo thing, heh. But definitely add the berries and yes, give it a few hours to set ecstatic

If anyone has a recipe for a vegan lemon pie i would be soooooo grateful! Like a lemon meringue pie but without the meringue cause I think that would be near impossible :S

There's a meringue cookie mix made by angel foods, which is vegan. You could probably just use that as a topping for the lemon pie? I've never personally tried it, but I don't see why it wouldn't work. happy

I'm working my way through "The Compassionate Cooks - The Joy of Vegan Baking" book at the moment.

The hardest part is selecting something!
It is by far the best baking book I've ever found. Highly recommended happy

Try this one - it's simple, and yummy!

( You probably only want the filling, any baked sweet shortcrust pastry shell would be OK)

3/4 cup soy milk
1/2 cup each of lemon and orange juice
2 tbsps lemon zest
1 tbsp cornflour
1tbsp  custard powder
3/4 cup sugar (check for sweetness)
1 tbsp Nuttelex

In a saucepan, whisk juices, soy milk, sugar,cornflour and custard powder. Stir over medium heat until it thickens, boil, stirring, for 1 minute.
Stir in Nuttelex and zest.
Pour into cooked pastry crust , refrigerate until set.

my best friend makes the most amazing vegan cup cakes. im pretty sure she gets her recipes from the "vegan cupcakes take over the world" book. im drooling just thinking about them. hahaha

i made custard tarts the other day they were so yummy and all it was was short crust pastry and powdered custard made up.

all you have to do is cook the pastry a little bit first make the custard put in the oven on about 180 till it gets a skin then sprinkle nutmeg or cinnamon sugar turn oven down to about 150 and cook until you think its ready basically happy
