lots and lots of vegans and vegans in transition here.

if you look through the food sections of the forum you will find lots of recipes. also checkout http://foodgawker.com/?s=vegan    ---> be prepared to drool.

the PETA vegan college cook book will arrive in my letter box soon... and i'll put some recipes up. all only requiring a microwave... nothing more!!!

mmmm... the food on foodgawker looks amazing! ecstatic

and the vegan college cook book is almost enough to make me want to get a microwave ... can't wait to hear how the recipes are

NattiC_94, you may also want to check out http://www.unleashed.org.au/change_the_world/go_veg/vegan_recipes.php for some more recipes

HELL YESS! Tofu is great becase its really flexible in cooking and its made to absorb the flavours that its cooked with.

Try chopping a block of plain, extra firm tofu into 3cm cubes and marinating them in a large bowl with kecap manis (sweet soy sauce), kecap asin (salty soy sauce), crushed garlic, crushed coriander and a bit of vinegar. Let it soak in the fridge for at least 3 hours (overnight would be best).
When thats done, pop the cubes onto some skewers. Mix some of the juice with crunchy peanut butter so its pasty. Put the skewers onto a baking tray (lined with foil) and spread the paste on top. Bake it in the oven for about 15-20 mins. Delicious.

You can also make a vegan chocolate mousse using silken tofu. I cant recall the actual recipe, but it called for cocoa, natural smooth peanut butter, castor sugar... and silken tofu happy

Here's one, not with peanut butter, but it's a goodie: http://whyveg.com/recipes/make_this.php?recipe=15

I made this one myself... I used to be weirded out by the idea of silken tofu in mousse... but I'm totally sold after making this happy

Peanut butter sounds pretty good tho.. I might have to try that!

i was also weireded out by the idea of anything calling on tofu for a sauce and dessert... still am for desserts - it just sounds unnatural lol
