I was a my local library and on display they had a vegan book i grabbed as soon as i saw it.
It is called 'now Vegan' by Lynda Stoner. I really love this book and it is simple to follow and the ingredients are not that hard to find.
Just wondering what vegan cookbooks other people really enjoy.

I will begin with the super cliche: 'Veganomicon' and 'Vegan with a Vengeance' (http://www.theppk.com/) they are by the same people who do 'Vegan Cupcakes Take Over the World' and 'Vegan Cookies Invade Your Cookie Jar'.

Other than those, my number one is 'The Vegan Table' (http://www.vegantable.com/).  It's by the same woman who wrote 'The Joy of Vegan Baking' and I adore it.

Does anyone have the 'BabyCakes NYC' cookbook? (It's all vegan and mostly gluten and sugar free cakes and cookies).  I *really* want it!

I was given Vegan Lunchbox, which is cute.

This is my favorite site:

http://fatfreevegan.com/

the recipes are amazing, and she has brilliant substitutions, like mini tofu quiches....

The Kind Diet by Alicia Silverstone!
Nor strictly a cookbook but it has a pretty awesome recipe section in it. Cannot recommend this book highly enough.

I recently bought a vegetarian book that has a fair few vegan recipes and most of the recipes are easy to veganise anyway. It's also got gluten free recipes for those of you who watch their gluten intake. It's call Harvest Vegetarian. It's an awesome book happy

also the veganomicon is hands down the best vegan cook book out there.
