isnt it just happy mornings are so smooth compared to afternoons, best part about winter nice slow cooked meals

The last two nights I've had Eggplant Parmigana. I used to make an awesome chicken parma back in the day and it's one of the meals that my BF misses most now that I'm veg. I've always heard things about how awesome eggplant parma was but wasn't sure, so decided to experiment and mm it was good!!! My bf LOVES it!!

It is such a cheap meal too. Got a huge eggplant for a few dollars and it made so many 'fillets'.

Anyway. Just wanted to share coz we had it the one night and then yesterday we had the left overs too. And the bf wants it again tonight. tongue

Just a great replacement for chicken parma fans out there anyway. happy

im experimenting and making cubes of rosemary, mushroom and garlic polenta crumbed and fried, maybe with some form of sauce

That sounds pretty cool, cous cous might work too.
Maybe a marinara type sauce?

His cooking videos are so funny, I've just been watching them all day today. Tomorrow I'm thinking I might go out and get some beans & tomatoes and make a big batch of this chili so I can have it a few nights in a row. It looks amazing.

I'm having celery, mushrooms, carrot, zuchini, broccoli and crushed tomatoes.
Canelinni beans and brown lentils.
Fresh parsley and coriander, rosemary, fresh cracked black pepper and some massel 'beef' stock.
Served with brown rice.
So... Stew? Lol
I love it, this is my go to meal. Took about 30mins though.
