Okay, I made this late last night. I didn't want to wait until Tuesday to buy silken tofu, so I used firm instead.
I added more water to the mix because the firm tofu was too... firm.  tongue
I did everything else as the recipe stated. It was very easy to make.
happy ...

AND IT'S AWESOME!  ecstatic
I ate some with marmite on bread this morning and I'm going to try it on pizza tonight. I'm going to buy more ingredients on Tuesday and make a huge batch of it to freeze.
Cheese has been a big problem for me. I can't buy vegan cheese at the shops here. They just don't sell it, and I can't afford to buy it online with the postage costs. But now my problem is solved!
Thank you so very much!

Yeah this is where I blog all the meals I make, all are my own creation apart from the thai peanut pizza which I've linked to the lovely carly's blog 'a profound hatred of meat'

If you try any of them let me know how they go, I always love to find out what others think of the meals happy

I gently grated mine into a zip lock bag and threw it in the freezer so I can use it on pizza whenever - My partners had it on a few things now... safe to say it must be alright! tongue haha

I made your mac n' cheese the other night and it was amazing. In my opinion is tasted way better than the mac n' cheese packets you buy from the supermarket. It was super easy to make, and you could use the cheese sauce for all sorts of things.
I also made your curried 'eggs' using tofu for lunch today. The tofu worked just as good as eggs do. The only change I made was that I crumbled the tofu instead of cutting it. It turned out great, and my parents thought it tasted exactly like the real thing. Win ecstatic
Next I really want to try the Spinach and 'Ricotta' Cannelloni.

Pretty sure I'm going to try your Shepard's pie recipe for tomorrow nights dinner. My husband is an omni, and I always struggle to find recipes that are filling enough for him. Some on there look perfect for him!

Unfortunately I have one of those in the house as well... it's extremely difficult. I usually find if I can't fill him up on dinner, he either has two servings or I fill him up on Soy icecream in a chocolate wafer cone tongue

I made your shepards pie, and loved it! The husband liked them too, I reckon if I hadn't have told him they were meat free, he wouldn't have known. I also added sweet potato to the mash, just cos I love it happy
