So it turns out the family I was housekeeping for - one of the daughters wants to be vegetarian and her parents won't let her...
I cooked three vegan meals -
My version of eggplant parma, which is baked crusted eggplant, topped with Moroccan beans and avocado, with salad and brown rice. They said they were still hungry after dinner so the next night I made -
Dukkah crusted roast pumpkin, roasted chickpeas with cumin & coriander, sesame seeds, cashews and almonds, fried green beans and saffron rice. And an apple pie.
Next night, Panang curry with potato, sweet potato and mung dahl. More saffron rice and lemon pepper spiced roast zucchini and carrots. For dessert, upside down pineapple cake with passionfruit and spiced orange layers.
They were really pleased with all the food, so I hope I proved that vegan food can be tasty and filling.
One of my friends went vegetarian after watching the live export stuff, which is great, and I think the thing that pushed him over was that two of his closer friends, my sister and I are already veg. So that's one.
I feel like I should do more. I try so hard not to be annoying or preachy that the most effort I make is to always cook really good vegan food, and to make sure I'm healthy as a good example.

I would love you to help me to go vegan once I am back in Melbourne. I got a happy partner that will go vegetarian once I go home and three lovely dogs that will vegan if we help them ..Are you close to Melbourne?... you don't need to babysit me but you can give heaps of cuddles to my lovely pups!
Since I have become a vegetarian I have influenced my fiance and mum in a number of ways. My mum has decided to eat more veg meals and is thinking of moving to be a vegetarian. My fiance is still a meat eater but he will sometimes eat my veg meals and he has reduced his meat intake. I started exploring meat free eating after my friend became a vegan 5 years ago. We now meet once a month and go out for a vegan meal. He never pushed me into eating vege but going out with him and trying vegan food has made me realise that veg food can be so tasty! I have also converted to drinking soy and oat milks.
My best friend is considering veganism a lot lately since I've been cooking for him and showing him things like Earthlings and the Gary Yourofsky Georgia Tech lecture.
And another really good friend of mine has asked to see those films and eats my vegan food whenever he can.
Other than that, I've had a couple of people tell me that I helped give them the final push to go veg via my blog on Tumblr (vegetivorous.tumblr.com).
Still, I never feel quite satisfied with what I do. Must. Change. World. -eye twitches-
I'm glad to see this post, I was just about to post how proud of myself I am. In 24 hours I have had 3 friends tell me I have changed their lives. I have my cousin who is going completely vegan. YAY. I have 2 good friends who are giving up dairy, but will still eat meat on occasions. They have also said they are going cruelty free with cosmetics etc. So that is really exciting. I have also helped open the eyes of quite a few of my friends, one of my besties has gone pescatarian, which is amaaaazing cos she really really loved her red meat. And my other has completely given up dairy and will only buy meat from reputable free range sources. I have had other friends going vegetarian and thanking me for sharing what I know via facebook. My hubby eats vegan in my house and loves it, but will eat whatever when he is out and about, but recently he said he never wants to eat Maccas again, or anything like that, and when we have eaten out together he has asked me to order for him... Vegan. So that is exciting. I was also out on the town the other night and got a felafel kebab and I had 2 young dudes ask me why I was getting felafel, I told them I was vegan and they asked me why, so I told them I didn't like animal cruelty and they asked heaps of questions, they were super interested and we talked for like 20mins and they thanked me when we were done talking... I definitely think I made them think long and hard, and perhaps they will make changes too. It sure seemed like they would. I am very proud to be able to help people on their journeys to be as cruelty free as they can. Obviously I would personally like everyone in the whole entire world to be vegan, BUT it is one step at a time, and every small change is a big change in the whole scheme of things!
I think the best thing we can do is inform...Not judge. People don;t like judgment, but a lot of people are willing to listen.

How did you make the panang curry? I used to buy little tins of it (a thai brand, 'maesri' or something?), but neither coles nor woolies stocks it any more. Most other panangs (or any curry really) have fish or oyster sauce in it
