bruschetta and Veggie Burgers thats i made last night :D

Last night i cooked dinner for the family ( mum, dad and my 2 sisters )  when i was planning on what to make i wanted to do something simple and something that would show veggie food is Yumm !! tongue

So i made Bruschetta as a starting dish and it was a hit - Mum and dad ( the biggest carnivours i know ) Loved it and couldnt get enought hehehe and my 2 sisters who are also veg loved it.

I made veggie burgers for the main - i will post the ingrediants below - and my family also loved it, it only took about 20 mins to cook everything, so its easy and you can add pretty much what every you like.

I also made a mango and passionfruit smoothy - vegan of course tongue and they couldnt even tell, they asked if it had milk in it and were so suprised when i said it was oat milk.

Bruschetta - serves 5
1-2 ripe plum tomatoes
2 cloves garlic, minced
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped.
2 mushed avacardo's
Tofutti cream cheese
Salt and freshly ground black pepper to taste
1 baguette French bread or similar Italian bread

Veggie Burgers - serves 5
Turkish Bread
6-9 small mushrooms ( steas removed )
2-3 diced ripe tomatoes
1 avacardo mushed
Tofutti cream chesse spread.
Rocket Lettuce
half a tsp of Minced garlic

^^^^ Its simple and you can add what ever you like to it, but that combination had the right amount of flavour i thought

Mango and Passionfruit Smoothy - serves 6
1 Ripe Mango
2 Ripe Passionfruits
fill half the blender with oat milk
2 scoops of Vegan Vanilla ice-cream
4 ice-cubes

Brushetta is always a hit, when done from scratch, so tasty! A great idea is toasting the bread befor eyou put the topping on, in about a 180 to 200 degree oven, lightly brush the bread with oil on both sides, and use a peeled and lightly crushed garlic clove, rub it against the bread for extra flavour. Toast that for a few mins, toasting, then take it out, put the topping on and back in the oven for a few more mins.
That can add so much more flavour to an already brill dish! peace

Brillient idea ecstatic haha wish i would of thought of that, im not much of a cook so thats why i only do simple things tongue
