You can basically have whatever you used to have without the meat( or preferably without dairy products...) . That's what I've been doing. I have to admit, I may still have the occasional free range omelet ( I actually know the eggs are free range because I get them from family that let them run freely around their huge land in the country)
If you look at the meat free Monday page, they have a load or really nice stuff to try, can't get the link ATM, sorry....
I usually get a whole heap of vegetables and all sorts of spices and sauces (check the ingredients of course) and become a madman in the kitchen. I love stepping into that role as soon as I enter the kitchen create a monster!!!
Ps: Alot of the Quorn and Linda McCartney products become really boring and You'll get to the point where you will be CRAVING for something other then the processed mock things. Honestley Its now Your oppoutrunity to create something wild and amazing and you can put Your heart into it!!!
Chucking chickpeas in with Veg stock, Onions, garlic, red and green capsicums with indian spices such as Garam Masala, Mustard seeds, tumeric, and cumin reignited my tastebuds. GO CRAZY!!
