Keep in mind that US cups and tablespoons are different from ours by about 15ml for the cup and 5ml for the tablespoon.

I've made this the last couple of weeks as it's such a huge hit with everyone I know!

(Vegan) Banana Passionfruit Loaf

Oven @ 170 degrees

Cream 125g of nuttlex and 3/4 cup of brown sugar. Add two teaspoons of no egg mix (the powder mixed with water). Mix in a teaspoon of vanilla, half a small can of passion fruit pulp and 3 overripe bananas. Add 1 1/2 cups of Self Raising flour and a pinch of Bicarb, then 1/2 a cup of your fave non dairy milk.

Pour into a lined loaf tin and bake for 1 hour.

It is so moist! And the passion fruit cuts through the richness and the banana. My partner begged me to make some this arvo.

Enjoy!

The egg stuff is just a binding agent really, so yours might be a bit crumbly, but if you keep it in a decent container and eat it with a spoon it should be fine! It won't affect the flavour. I think, but I'm not entirely sure, that no-egg is just a form of starch? Like cornflour or something. I might try just using that next time and see what happens!
