Lentil recipes?

lol
i guess it is a pretty dumb name....its basically spinach so y not just call it that?

POTATO & LENTIL BAKE

Ingredients:
1 cup Lentils
4 medium potatoes
1 cup cauliflower
1 carrot - diced
¼ tsp nutmeg
2 tbl olive oil
3 tbl sour cream (Tofutti or similar for vegans)
Salt & pepper

Directions:
1.        Cook lentils as per instructions on pack.
2.        Boil potatoes, carrot and cauliflower in water until soft.
3.        Combine vegetables together and mash a little so there is still some texture. Add cooked lentils.
4.        Combine vegetables with remaining ingredients.
5.        Place in a greased oven proof dish, sprinkle with vegan cheese of choice and bake at 220 degrees for 30mins.

I sometimes make a kind of 'lentil con carne' for tacos, but honestly I think they're better with spiced (or not) refried beans.

Easiest, quickest, laziest lentil dish in the world:
Take 1 can of lentils
Add 1 can of crushed tomatoes (I used the pre-herbed ones, but you can herb yourself)
Add any left over vegies you like (or, if you're like me and have a stash of 'emergency' frozen vegies, add those)
Mix, put in an oven dish.
Cover with mashed potato (or sweet potato, or puff pastry) and bake for c. 15-20 minutes.
Take out of oven, eat.  Yum!

Stefani,
I agree, but just a warning - I wouldn't use spinach in my soup recipie. It's go too soggy. Silverbeet is more fibrous than spinach, and holds up well in soup.

I found a really cool recipe for lentil bolognaise, and its really easy and tastes great. I'm sure u could find it on the internet somewhere but I'll try and write it out here sometime.
It has carrots, celery, tomato, red lentils, onion and garlic =]

oohh i found my new fave lentil recipe and its a salad so good for summer:

2 tins lentils drained (or 1 each lentil and chickpeas)
1/2 bunch coriander chopped including the stems (or parsley if you dont like coriander)
1/2 red onion chopped
2 tbsp sweet chilli sauce
2 tbsp olive oil
juice of 3 limes (or some lemon juice or lime squeeze)

mix all together and enjoy! especially good with a big piece of fried marinated tofu on top!
