velvet 2-layer cake

1/2 cup choc chips
1/2 cup margarine
1 1/2 cups flour
2 tsp baking soda
1 tsp baking powder
1 1/2 cups dry sweetener (sugar)
1 tbsp powdered egg replacer+4 tbsp water
1/2 cup soy milk
1 tsp vanilla extract
1 cup boiling water
2 tsp apple cider vinegar


preheat oven to 170
in a small saucepan, melt together the choc chips and margarine, stirring until smmoth. set aside.
in a large bowl sift together the flour,baking soda,baking powder.stir in chocolate sauce, sweetener,egg replacer/water,soy milk,vanilla,boiling water, and vinegar. stir together gently until 'just mixed'. pour into 2 lightly oiled 8-inched cake pans and bake for 30-35 mins or until toothpick comes out clean.
makes 2 layers for one cake.


CHOC MINT ICING

1 cup choc chips
1/4 cup soy milk
2 tbsp margarine
1/2 tsp mint extract

in a double boiler on medium heat melt together ingredients stirring occasionally until smooth. place mixture in refrigerator until cool,and has reached a spreadable consistancy.
makes approx 1 1/4 cups

::if you dont have a double boiler just place a small pot in a larger pot holding water::

i put strawberries in the middle of the layers and on top of icing the first time i made it

and for my birthday i put soy whipped cream in the center yum yum
