I already eat pretty healthily, but include meat in my diet for convenience and nutrition. Finding a protein substitute will be difficult if I go veg. I'd go veg for environment and health reasons, and more recently for the humane treatment of animals.

I have some food intolerances that mean I can't eat beans for protein, but tofu and lentils (to some degree) don't affect my stomach. Fructose malabsorption also rules out vegies in the onion and garlic family more or less, among many other fruits and vegetables.

I think being vegetarian would teach me a lot about cooking and spices to ensure I have enough variation to stick with it.
