I'm going to japan in a year or so and realistically I'm not going to be able to read the ingredients or tell every restaurant I don't eat meat, dairy or eggs (apparently veganism barely exists in japan and being vegetarian means you still eat fish rolleyes)

I'm just not sure what to do, do I just accept that I will most likely unknowingly eat non-vegan stuff?

Ideally it's really not easy. If you accidentally slip up don't beat yourself up. So SO much stuff that's even labelled as Vegetarian over there has pork broth etc. The above post has heaps of good tips so hopefully you should be fine. Japan is awesome though I love it too.

This is one of the struggles of being vegan, I guess. Japan is a lovely country, known for its culture. Their food is also mouthwatering. I remember going there a few years back (wasn't vegan yet) and I know for a fact that it's hard to know which is vegan, which is not. And honestly, it's hard to resist. Even their ramen broth, being one of the best things about their country, is made of meat so it does suck.

But yeah, the tips posted above would help you. Happy travelling!
