best vegan/vegetarian cook books and recipes

I just went down to Robinsons bookshop and bought a book called 'The Really Useful Ultimate Student Vegetarian Cook Book.' It looks pretty good.
What are your favourite vegetarian or vegan cook books or recipes?

I ordered PETA's Vegan College Cook Book about 2 weeks ago... can't wait till it arrives!

now vegan! by Lynda Stoner is pretty damn good. Some of her recipes are also salt free and gluten free.
Also for any foodies with intolerance "vegetarian cooking without"  by Barbara Cousins has some yummy recipes that are free from gluten, sugar, yeast, dairy products and saturated fats. Surprisingly (the recipes ive tried at least) taste awesome. just watch out for the few recipes that contain egg.

Meat haters pizza.... bahaha cant wait to try that.

Anyhoo there are stacks of vegetarian cook books at my house. Here are a few which I have found most reliable and useful (and delicious of course).

"Veg Out- 60 knockout recipes for the laid-back cook"
"The essential vegetarian cookbook"
"Great vegetarian food"

And theres also THE INTERNET! yay! Kasquillions of recipes from a quick google search. Its also great as you can narrow it down to what you want (such as searching "quick vegan polenta recipe" or something)

Also, look in the pantry and at the back labels of some ingrediants, also a great source for recipes. happy

My absolute fav cookbook is "Recipes for Health & Happiness" by Amanda Quinn. All vegan and most gluten free.
