best vegan/vegetarian cook books and recipes

I currently only have a couple of vegan cookbooks (the only bookshop that has them is terribly expensive and I'm dead broke) and I'd have to say that "Skinny Bitch In The Kitch" is quite good. My cousin bought it for me. Basically, its about how to lose weight (though you don't have to be overweight to buy it of course), and its written by a couple of vegans. The recipes in there are quite good and I've made a few things from it. And the book before it ("Skinny Bitch") basically explains how and why to be vegan. A good read if you ever get around to it.

And that chocolate cupcake recipe with the oreo icing (its floating around somewhere on this site) have seriously got to be the best cupcakes I have ever eaten in my entire life! My whole family (who are hardcore meat eaters) love them and are constantly asking me to make more. So I definitely recommend you give them a go!

I love my aunt!
Just received not one, not two, but THREE VEGAN COOKBOOKS for christmas the other week. So far, they have all proved their worth:

"Now Vegan" - Lynda Stoner
"Vegan, cooking for one" - Leah Leneman
"Vegan a go-go" -Sarah Kramen

I know this is an old thread but I think it deserves reviving and I have a few books to add =)

Vegan Diner - Julie Hasson (All diner style food, including cinnamon rolls, waffles, burgers and lots of yummy desserts!)
Hearty Vegan Meals for Monster Appetites - Celine Steen and Joni-marie Newman
Both of the above use seitan quite a bit for those that like it, also has some vegan cheese recipes. These two books make me drool!
Vegan Pie in the Sky -Isa Chandra Moskowitz and Terry Hope Romero (I want to eat the pictures  the pies look so good!)
Party Vegan - Robin Robertson (Recipes and Party Planner)
