I'm so envious, Karen... I wish I had a garden to potter around in today!
I'm hosting a vegan tapas dinner party - for myself, my vegetarian husband and 6 of our omni friends (all of which have dramatically cut down their meat consumption since the last dinner party - hopefully this one might kick them over the edge!)
I'm currently making gazpacho, croquettes, risotto balls and spicy bean-balls. Plus, a chickpea, coriander, and cucumber salad for a bit of respite from the spice of everything else. Next I'm going to make churros and chocolate ganache (my husband is under strict instructions to not return home without soyatoo cream!) I've already made almond and choc-almond gelato.
I'm spending the day slaving away the computer trying to finish my giant load of homework, thus contributing to my carbon footprint by using a computer.
