Low Carb Vegan

Hey,

I just got back from the Dr who told me that my blood sugar is high and as I don't eat much processed food I need to cut out my carbs. No brown rice, legumes, beans, fruit, starchy veg etc.

I have been a vegetarian for 19 years and only vegan since the start of the year and I have never had this issue before. I can see how my diet has changed and my carb intake has really increased.

I don't want to include any animal products back into my diet, so if any of you have any suggestions please share.

I hate doctors and dont trust them..

If you cut out browbn rice and legumes and beans and such where are you going to get your protein and iron from?

and not eating much processed food is a good thing.. people were perfectly healthy, sorry were healthier before processed foods.. sorry, If I were you I would ignore everything he said.

It IS possible to be low carb and vegan, and with just a few kitchen skills you can enhance the digestibility of the protein sources that will be available. You can use soy protein isolate, all types of soyfoods (many prepared vegan and low carb versions are available), seitan (wheat gluten 'meat'), nuts and seeds, and limited quantities of lentils and some beans (1/4-1/3 cup servings at a time; in general no more than one of these per day) I would think, but if the doc says no...

You can also buy marinated extra firm tofu in packages in the dairy section, and slice it on top of greens for a protein boost with limited cooking. And a lot of veggies are pretty low carb, especially greens.

Listen to Mondaychild. Also if you are worried about your dr's reputation maybe try a second opinion. Did you take a blood test? if so they pretty much cant lie.

Im sure there will be help.

Ditto on the second opinion. There are plenty of things that could cause blood sugar issues.

I do think doctors can be a bit narrow-focused in their diagnosis when they know you are veg.

Definitely get another opinion. That's alot of good foods you'd be cutting out.

There are different types of carbs, low GI, high GI, simple sugars, complex carbohydrates etc which all have different effects on blood sugars. Even diabetics don't cut out carbs, but low GI is a diabetics best friend. Even with what I said before I definitely agree- second opinion.

That's quite a strange diagnosis and solution.... high blood sugar? There's a lot more involved in that than just diet, and one blood test.

If you're worried about it I suggest you see a dietician and get a proper set of bloods done.

Plus, carbs aren't what increases your blood sugar, refined carbs and sweet fruits are.... sort of, that's just a way too simplistic view of it.

But regardless, it's quite easy to eat low 'carb' as a vegan.
My sister has problems with spikes in her blood sugar (messes with her moods and anxiety) she has to stay away from sweet fruits - basically everything except bananas and a few others, white rice/pasta/baked goods (refined carbs) and processed foods. Brown rice and legumes shouldn't be a problem...
