Vegan Quiche

Ingredients:
- 450g (approx) firm tofu, drained
- 1 tsp minced garlic
- ½ tsp turmeric
- ½ tsp salt
- ¼ cup nutritional yeast
- ¼ cup cornstarch
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp thyme (fresh or dried)
- ½ tsp basil (fresh or dried)
- ¼ tsp chilli flakes
- Whatever vegies you like!

Instructions:
- Preheat oven to 175'C.
- Lightly grease a pie pan and set aside.
- Combine tofu through lemon in a blender and puree until it is a smooth & even yellow batter.
- Prepare whichever vegetables you would like to add (i used kale, spinach, mushrooms, & sweet potato). Try sauteing mushrooms first, & if you have large chunks of root vegies like the sweet potato, then cooking them for a little while first might help too

- In a large bowl, mix tofu mixture with vegetables & herbs.
- Once combined evenly, poor into prepared pie dish.
- Bake 30-45 minutes at 175'C, or until cooked through & slightly crusted on the edges.
- Allow to cool for 10 minutes before slicing.
Great eaten hot or cold with a yummy side salad
