I received the book, "Vegan Cupcakes take over the world" for Christmas. It is American-based and a number of recipes call for non-hydrogenated shortening. I only know of Copha as a shortening, but I believe it is hydrogenated. Can anyone help me out with a non-hydrogenated shortening?

Yes, in answer to your question, 'Copha' is hydrogenated. Look for 'organic' or 'cold pressed' on the labels for coconut oil worth using as a dietary supplement.
Copha works fine if you're making hand creams or such things though.
