I received the book, "Vegan Cupcakes take over the world" for Christmas. It is American-based and a number of recipes call for non-hydrogenated shortening. I only know of Copha as a shortening, but I believe it is hydrogenated. Can anyone help me out with a non-hydrogenated shortening?

i have that book i use copha (if your talking about the icings?)
you just melt it a little before you use it then mix it in like normal
Yes, in answer to your question, 'Copha' is hydrogenated. Look for 'organic' or 'cold pressed' on the labels for coconut oil worth using as a dietary supplement.
Copha works fine if you're making hand creams or such things though.
