Hey, I have a really cool cookbook (Vegan Soul Kitchen - vegan versions of American "soul food" style cooking, yummm) which calls for seitan in a few recipes. That's wheat gluten, right? I know it's in a lot of vege-meat products but I don't think I've ever seen it on its own. Anyone know where to buy it (in Brisbane)?

Seitan is the basis of a lot of mock meats, and there are some great recipes to make it yourself.  That way you can cut out a lot of the nasties that are in processed foods.

I haven't seen it as a ready-made product anywhere in WA, though you might be able to find some in Qld, Vic or NSW (perhaps at an Asian grocery store or health food shop...?)

if you want to have a shot at making your own, i freezes well and would be cheaper (waaaay cheaper)
