I'm cooking a mock version of spinach and ricotta pie....I just used tofutti and spinach, with some wholemeal bread crumbs, garlic, onion and a bit of veggie stock all wrapped up in some pastry. yum yum yum
Had the most amazing tempeh satay burger at this vegie gallye food stall at the fringe the other day. First time I ever had Tempeh... can't say I was dissapointed. Shredded beetroot, bean sprouts, lettuce, onion and carrot with the tempeh and satay sauce in a foccacia... omnomnom
I'm having an Eggplant and Potato Moussaka with Pine Nut cream and then for dessert a Pear & Frangipane Tart with some Cocoluscious icecream!

I hope it all turns out! I'm new at cooking vegan dishes and my vegie sausage casserole last night didn't turn out well (although I think it was just because the brand of sausages I got weren't so nice).
The moussaka recipe is from Veganomicon and the tart from Vegan Pie in the Sky!
