Had a Mexican-style bean thingy on crispy roast potatoes. Veeerrry nice!

Guilty pleasure junk food dinner. Fry's "chicken" burger, tartare sauce, ketchup, iceberg lettuce, white bun.

Exactly zero nutritional value, but damn tasty. wink

Hello angel,

Try this one to start ….


˝ DICED pumpkin
1 capsicum
1X DICED & salted eggplant (eggplant needt to be “lightly” salted before cooking to remove the bitterness.
1 can chickpeas
1 x can tinned tomatoes
1 x Coconut cream
1 x red onion

Coriander
Crushed Ginger
Crushed Garlic
2 x small red chillies

Instructions:
Roast pumpkin and capsicum.

Put some oil in a saucepan. Fry onion until brown, add all the ingredients to the saucepan except coconut cream.

Remove Pumpkin & capsicum from oven once roasted & add to saucepan. Add coconut cream and let simmer for 5 minutes.

Serve as is.

on monday night I had tofu and noodles then for dessert I had chocolate oreo cheesecake.
and last night I had packet mix of indian curry and banana rolls for dessert.

Today I'm having hot chips and an avocado. Two of the most simple yet most delicious things I've ever known!

A hot chips and peas pack and a crumbed pineapple or potato fritter usually go down well. But I get it from a chicken shop near the school and I feel bad supporting such a business. Once I finish here I won't give them my money any more c:

Today's menu..

Breakfast - Toast with avocado and baked beans
Lunch - Cashew, Brazil nut and almond butter Sandwich
Dinner - Leftover pizza (tomato, artichoke, capsicum, garlic, basil, spinach leaf, onion and zucchini.

Snacks through the day.. watermelon, orange, pineapple, mint and ginger juice and pistachio nuts... some yummy choccy so-good icecream and the odd coffee.

I have my delish pumpkin soup for tomorrow!!
