I decided to make Vegan Dad's tofu etouffee over corn cakes

I had to improvise a bit but it tastes a-ma-zing so far! I can't wait to try it with the corn cakes (polenta pancakes basically)! Should be good!

Well I liked the etouffee, but the corn cakes were a bit too weird in texture! My other half ate it, but didn't love it, eldest daughter tried a tiny bit and opted for a jam sandwich instead and our youngest daughter scoffed if like it was sent from the gods!  laugh

Guess me and the little one will be the only ones eating leftovers!

Vegan Stir Fry yumm lots of caps, mushies, spinach, onion and garlic with seasme oil and soy sauce on vegan hokkein noodles. My grandma didn't even notice it was vegan hehehe

Yesterday I sort of brought the slow cooker out of its summer holiday and made up a recipe as I went along. It was a lentil casserole. I'm sure there are already tonnes of recipes for them out, but I didn't use one, which is a first for me. happy I'm trying to get more into inventing recipes and being creative about food.

Well at 645am I have planned that my dinner will be roast vegetable with roast tofu. Now I have never roasted tofu before so I have no idea if that will work or not but thats the plan anyway hehe.
