I have a very simple but tasty vegie soup recipe as that I made up but it's nice. The only fiddly preparation besides the vegetables, naturally, is the continental parsley. Which can be frozen and added to other recipes later on.
HINT: When you've wrapped your parsley in cling wrap or whatever you use, make sure you then wrap it in foil to avoid freezer burn.

Serves 2:
1 litre of water
Half an onion
1 cup parsley leaves chopped
4 stalks of parsley chopped
1 carrot
1 zucchini
I turnip
1 parsley
1 stalk of celery
3 potatoes
1 teaspoon of tomato paste (preferably greek or italian style)
1 vegetable stock cube (massel brand)
Salt and Pepper
Optional: 1/4 cup small pasta (egg free)
You can add any vegetable of your liking of course I just use these as I find they all taste
 nice together.

When the water starts to simmer,Simply add the onion and parsley (stalks and leaves) add potato, turnip, parsley, stock cube then remaining vegetables. Add the tomato paste last, along with the amount of salt and pepper you desire. Cook until tender ~enjoy~
Hope you will try the soup it's really yummy!!!
