Another thing which is jammed packed with nutrients are Chia Seeds. Since going vegan I would say, with only the exception to B12 this is the number one health food that has improved my energy levels, health, skin, everything!
They are these tiny little black seeds that have been used by the Aztecs for centuries. They are the HIGHEST PLANT SOURCE OF OMEGA 3 and also a great source of protein, iron, calcium and fibre. The recommended straight way of taking them is soaking a couple of table spoons in a 1L of water overnight in a bottle and just drinking it all the next day. This is what I do and I love it, but you can also ad them to cooking, make a jelly paste out of them and a whole bunch of other stuff, here's the supplier I get mine from but you can also get them from health food shops:
