So what happens, if this is your only option? Do you bring and prepare your own substitutes, do you say you aren't hungry and sneak some of your food later, do you tell them straight out and just deal with it, or do you eat meat and bare with it?

You tell them and deal with their anti-ness. It is a personal belief and people need to be more open minded. so open their minds. either that, or tell them you are allergic to meat.. this is a real thing. One of my friends is actually allergic to meat.
You have probably done this but just incase, perhaps just letting the non vegetarians know in advance that you are vegan/vegetarian. As the Mum of a young vegan woman, I find that knowing in advance when she is coming to stay means I have the time to shop for flavoured tofus, soy icecreams and vegan meat alternatives - it's also fun and I know she really appreciates that I've made the effort
