When I was vegetarian I didn't, but when I became vegan I did. When you eliminate so many food groups, you need to do your research!
It's funny now when ppl get worried about your iron levels etc when we know there are so many nutrients in all our "veg" food!
Yeah tell me about it. Although being vegan doesn't eliminate any food groups - you can still eat from the meat and dairy groups by using meat and dairy alternatives which of course don't contain the same levels of saturated fat, and have no cholesterol! So looking at it logically, it's now wonder I'm so much healthier being vegan.
I did a animal care coarse and got high distinctions the whole way through. I can give alot of the credit to veganism because we would get asked stuff like whats the most sensitive part of a birds body and i knew it was the beak not because i read it in a txt book but because i saw a bird getting its beak trimmed on a A.R website.
It also brought a lot of good people into my life who helped me. I met someone on another vegan forum who was a vet so i would ask her a lot of questions and she was always willing to help. Mikey (who is on unleashed) also helped me especially with the oc health and safety stuff. I also signed up to a animal rescue group when i first went vegan and they have people who specialize in different animals so for example i had an assignment on possums i would email the possum adviser with a list of questions (feeding habits, enclosure, temperament ect) and they would generally help me or at least point me in the right direction.
And you know something else I learned? GPs get next to no training in nutrition and they are 'educated' via studies conducted by the meat and dairy industries to tell you that animal products are part of a healthy diet.
I find that the people i know who are vegan are very analytical, and are already the ones getting good grades, as they are the ones more likely to question things. It's not always the case, but it's an interesting trend that i have noticed...

Another point of interest here is that all the vegans i know are all atheists. I'm sure there are exceptions to this, but it's again that thinking, analysing and questioning of social paradigms..
Yes, not just accepting the norm, because that's the way it's always been etc. etc.
