Lentil recipes?

anyone have a good recipe for lentils?

something quick and easy?
i need something new

Megadarra (garden of vegan)

1 large onion roughly chopped
1 tbsp sesame oil
2 cups of cooked or canned brown lentils
1 tbsp braggs or soy sauce
1/4 tsp black pepper
1 tsp cumin
1 large tomato chopped
1 1/2 cups cooked rice

in a large saucepan on medium heat sauté the onions in oil until translucent stir in lentil braggs pepper cumin and tomato and saute for 4-6 mins in a large bowl toss lentils with cooked rice
makes 2-4 servings

Here's my favourite soup. It's lebanese and the stock is lemon juice.

Lemon, Lentil & Silverbeet soup.

1 bunch silver beet
some garlic
cup of green lentils - soak overnight
5 lemons
2 onions
olive oil.
salt (if you need it)

slow fry garlic & onions until onions translucent.
chop the white stalks off the silverbeet, keep the green leaves. Chop the leaves up.
squeeze the lemons to get the juice.

Boil & simmer the lentils, change the water half way to discard the frothy water.
When cooked, change the water to the lentils. Add the fried garlic & onions.
Add the chopped silverbeet, & juice of lemons. Simmer until flavour mixed, and it is all properly cooked.

Lemon Juice & onions: Vit C (helps iron absorption)
Lentils & silverbeet: protein
Silverbeet: calcium + Iron

Spiced Potato & Lentil Curry
1 tbsp oil
1 small onion, diced
1 red chilli, split lengthways, deseeded, diced (optional)
2 cloves garlic, crushed
1 tbsp ground coriander
1 tbsp ground turmeric
6 medium potatoes, cut into 5mm thick slices
2 x 400g cans lentils, drained and rinsed
2 cups vegetable stock
You can also add some green beans, which always tastes yummy

Place a medium sized heavy based saucepan over medium heat and add oil. When oil is hot add onion, chilli and garlic and cook for 3-5 minutes.  
Add ground spices and potatoes and fry for 5 minutes.    
Add lentils and stock, then simmer for 20 minutes or until potatoes are cooked and stock has evaporated.

This makes a fair amount!!

French Lentil Soup

2 cups french lentils (brown)
2 teaspoons olive oil
1 large white onion, diced medium
1 large carrot, peeld and diced small
5 plum tomatoes, diced/ 1 can tomatoes
4 cloves garlic, minced
2 teaspoons dried tarragon
1 teaspoon dried thyme
1 teaspoon paprika (hungarian if you've got it)
2 bay leaves
black pepper
6 cups veggie stock

Heat olive oil in the soup pot. Add carrots and onions and cook about 10 minutes over med-high heat, until onions are browning and even a little burnt. Add the garlic , herbs and spices (except bay leaves), saute 2 minutes. Add the tomatoes and a little spash of water if neccesary and stir to deglaze the pot. Cover and cook for 5 minutes.

Add salt, 4 cups of veg stock and cover to bring to a boil. Add the lentils and bay leaves and cover again. Simmer about 45 minutes until lentils are almost totally tender. Add 2 more cups of stock, cover and bring to a boil again, about 15 more minutes. If it looks too thin, uncover and simmer for a couple of minutes. If it looks too thick, add a little more water.

OMG I love lentils!

Curried lentils & spinach

1 cup brown lentils
1 onion, chopped
3 cloves garlic, crushed
1 bunch spinach, chopped
500g tomatoes, peeled and chopped (I never peel!)
2Tbls tomato paste
2tsp curry powder
2tsp ginger root, finely chopped
1/2 tsp nutmeg
1/2 tsp cinnamon
1 cup water

Saute onion in a little oil for 5 mins. Add ginger, garlic and spices.
Stir in the chopped spinach until wilts,
Add all remaining ingredients and gently simmer until the lientils are soft.

Serve on rice.
Yum!

Matt, matt, you gotta know your greens.
They are yummeh.

Silver beet is not silver, it's green.
Very confusing.

It's the 'spinach' with wrinkly/bubbly leaves and has a long thich white stalks.

then why would someone have named it a SILVER beet?!

i bet it was some botanist just having a laugh... or whatever the people are called who discover vegetables tongue
