when my boyfriend told me that one of the things he misses most was Baileys, i decided to do an experiment and this is what i came up with (this is by no means a health drink, but its delicious and alcoholic so enjoy)

for just over 2 litres of Irish cream,
- 3 cans full fat coconut cream
- 2 cans coconut milk, or about 800ml of another nondairy milk of choice (i just used coconut cream cause its 80c a can at woolworths)
- syrup of choice, to taste (i used a far bit of agave nectar, but maple syrup works great too)
- Jameson's whiskey to taste (i made one batch extra strong and with not even half a cup per two litres)

you just put everything in a big bottle, i used an old cordial one, and shake it up as you go to incorporate everything.
no heat required, no weird thickening things, just stuff you can get from any supermarket really.

if you already have some whiskey then the other ingredients shouldnt cost over $10 depending on the brands you get.

and yeah, i did check and Jameson's is definitely vegan. Barnivore approved and they even mention it in their FAQ http://www.jamesonwhiskey.com/en/faq

I think I shall have to try that, thank you.  I have been a vegetarian since I was 14 (42 now) and I'm only now making my way into Veganism and making my way through my last bottle of actual Baileys...
